Sumeet Sud discusses Making of Sea Salt

There are two ways to get sea salt: boil seawater to evaporate the liquid and leave salt behind, or employ the sun for solar evaporation, which is longer but uses no fuel or electricity. Boiling involves so many resources that you don’t have to use and you’re boiling out all the good minerals. The solar process is economical. One gallon of seawater will produce about 4 ounces of salt. The sea water is pumped at the beach that sends the water into containers in the truck, which is driven back to tanks at the saltworks. The seawater is filtered to remove sand and other impurities, then it goes into solar ovens under glass. It takes about three to four weeks for most of the moisture to evaporate. Then the salt hangs in cheesecloth sacks for a few days to completely dry. Part of sea salt has a flaky texture in the coarse state, lightly grinded to break up large chunks before packing. A number of restaurants, bakeries and even breweries like to use the sea salt.
